I don't think it's out of the realm of possibility for a small team or even an individual to go beyond the original team. There aren't that many monster types, for one thing, and the dungeons are rather same-y. Assuming the import infrastructure is there, a really good modeler/environmental artist could go a long way towards surpassing the original. Hell, give me some rats...Dragons, kobolds, etc. Lots and lots of room for variety there.
I'd also like to see them go beyond the dungeon--get outside, show me some terrain.
Don't get me wrong--I loved Grimrock--but this is just the tip of the iceberg here.
