I really enjoyed Far Cry 1

I really enjoyed Far Cry 1 and 2 pretty much for the same reasons you did. That level in Far Cry 1, I think it's the 8th level, where you just hop from island to island destroying enemy bases however you see fit... it was the promised land of gaming. Then the trigens came out and took our game away. Oh well, still an amazing experience on the whole. I think I enjoyed the sequel a little more than you, maybe because I'm in desperate need of an open world FPS, but I agree that it became quite tedious and buggy frequently.

Crysis. A beautiful game to be sure but the narrowness of the player's path (unsure of terminology here) took away what made Far Cry special, and left me with a game that couldn't hope to compete with the level design of juggernaut fps games like Halo or Half Life 2, except in technology. For this reason I'm not excited about Crysis 2.

Now that Jurassic Park game you mentioned... THAT could be a video game promised land. I actually wrote a treatment for an open world dinosaur hunting fps a few months ago just to kill time.
