This is a great game, worthy of all the bajillion ports it's had. I like the DOS version the best myself. I was never able to do very well at this game, as I'm pretty bad at the sword fighting. But it's still lots of fun to play. I may have to try the PSP version, I didn't know there was one. I'll have to watch this video when I get home.
Another Sid Meier game worth looking at is Covert Action. This didn't get as many ports as Pirates!, but I think it's just as fun. It's kind of like Carmen Sandiego for adults. Only game I've ever played where you have to actually decrypt a cipher by hand.
As for making PSP videos, you can run RemoteJoy and view your PSP display on your PC over USB. From there you should be able to capture video. I haven't tried this myself, but it should be doable. Amazing what they can do with homebrew on the PSP.
