I think one of the big reasons why such games are trotted out time and again is because they're pretty much understandable at face value, unlike something deeper like an RPG or strategy game. They also have approachable and simple visuals and simple sounds. There's something "just right" about old arcade games. Whether they're representative of videogames to us or not is really moot, as they ARE associated with the word "videogame" by the masses. If someone thinks videogame, they're far more likely to think "Pac-Man" than they are "Ultima".
Frankly, I wish more games were like the arcade games of old. Complications, be it gameplay or audio/visuals do not necessarily make better games. With that said, I find there's a nice mix today, regardless of one's desires.
