Good comments - I'm an iPhone developer myself so if you have any questions I am good to ask. :-)

Change your email signature in the Settings app. You will find it under Mail, Contacts, Calendars.

You should read up about iPhone OS 3.0, it will be a free update this summer, it includes some very useful things (like syncing Notes, and being able to search your Mail, Calendar, Notes, etc. from one place... it can even search through GMail messages that aren't on the phone) And enables app developers to do new things like making turn-by-turn GPS apps and connecting to other devices with Bluetooth or the dock connector.
